Luncheon guests -- about 75% local businesspeople -- enjoy repasts such as char-grilled beef salad, Champers fish pie, grilled barracuda, or chicken and mushroom fettuccine napped in a creamy chardonnay sauce. Dinner guests enjoy dishes such as the roasted rack of lamb with spring vegetables and mint-infused jus, the sautéed sea scallops with stir-fried vegetables and noodles with red Thai curry sauce, and the Parmesan-crusted barracuda with whole-grain mustard sauce. The portions are hearty and the food is well seasoned with Caribbean flavors, "just the way the locals like it," says Newman.
