	Having used Hubert's gentle, comfortable inn for our base of operations in St. Barthelemy for the past two years, we have been well pleased. The ambiance is pleasantly French, but the language is English (much to our chagrin). The cuisine makes great use of local ingredients done in a French style: strawberry grouper quenelles, sauce hollandaise; spiny lobster crepes etc. The wine cellar, and its value, is much better than expected, even in St. Barthelemy. The pool has great moonlight views, the rooms are elegantly simple and typically Caribbean. (Who needs Disney World in St. Barth?) A car is necessary. Overall, the value is outstanding.

	Our recent visit to St. Barts after several other visits provided the opportunity to stay at the Hostellerie des Trois Forces. We have usually stayed at power luxe accomodations, but owner and chef, Hubert's quiet charm and generous spirit contributed greatly to creating a very unique three day stay for us. This place provides a real opportunity for true romance. The simple, rustic rooms have lovely sea and mountain views. There are hammocks on the balconies for naps and quiet leisure. Our breakfasts and dinners were personally tended to by Hubert's delicious cuisine. His special presence and winning ways are the charm. It was a nurturing and replenishing experience...Merci beaucoup, Hubert!
